Mugs: Chocolate Cake

We’ve tried quite a few mug cakes with chocolate, but never the here you go, for you and a friend to share a nice, classic chocolate mug.

1 egg
1/4 cup granulated sugar
Pinch of salt
2 tbsp cocoa powder
2 tbsp butter
1 tbsp vegetable oil
1/8 tsp vanilla extract
1 tbsp coconut shreds
1 tbsp mini chocolate chips
3 tbsp milk
1/4 cup all-purpose flour
1/4 tsp baking powder

1. Whisk egg, sugar, salt, cocoa powder, butter, vegetable oil and vanilla extract into a bowl the mixture is smooth, and then add coconut, chocolate chips and milk.
2. Place flour into a small bowl and stir baking powder into flour. Pour flour mixture over batter and whisk.
3. Divide batter evenly between 2 coffee cups, and microwave each cup for 1 to 2 minutes.
4. Top with some fresh fruit. Share and enjoy with your roomie! 🙂

Mugs: Chocolate chip cookies

Ahh, the traditional chocolate chip cookies, the original of all cookies, the king of all snacks, the savior of my life. And now you can make it in a minute, in a mug.

 1 tbsp butter
 1 tbsp sugar
 1 tbsp brown sugar, firmly packed
 1/2 tsp vanilla extract
 1/8 tsp salt
 1 egg yolk
 3 tbsp all-purpose flour
 1 and 1/2 tbsp chocolate chips

1. Melt butter in a microwave (using a mug), and then with a spoon, mix in sugar, vanilla extract and salt. Add egg yolk and flour, mixing well. Fold in chocolate chips.

2. Microwave on high for 45 seconds. Serve warm, and for here, do whatever you do to your regular cookies! Add ice-cream, get a glass of milk….whatever floats your boat!

Mugs: White Chocolate Macadamia Cake

This three minute recipe yields two cakes—one for you, the other for whoever you choose. 🙂

1 large egg
3 tbsp vegetable oil
3 tbsp buttermilk
1/4 cup sugar
1/4 tsp pure vanilla extract
5 tbsp self-rising flour
Pinch of kosher salt
1/4 cup white chocolate chips
1/4 cup chopped macadamia nuts

1. Whisk together the egg and oil and stir in buttermilk, sugar and vanilla. Add flour and salt. Beat the batter until smooth. Divide the batter between two mugs.

2. Microwave separately for 30 seconds each. Top each mug with half of the chips and nuts then cook each mug, separately again, for 1 to 1 1/2 minutes more, until firm and risen.

Mugs: Caramel & Chocolate Cake

Caramel and chocolate have always been my two favorite candies, and this caramel & chocolate cake may or may not be my favorite mug cake so far. It also makes a simple Mother’s Day dessert. (Time: ~3 minutes)

3 tbsp all-purpose flour
3 tbsp sugar
2 tbsp unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg - beaten
3 tbsp milk
1 tbsp vegetable oil
2 small (or large, depending on how 'caramel-y' you want it to be) pieces of caramels

1. Add flour, sugar, cocoa, baking powder, salt, egg, milk, and vegetable oil into a bowl and mix until moist.
2. Pour into a mug, and add your caramel cubes into the center.
3. Microwave for one minute. If needed (read: too gooey), microwave in increments of 15 seconds.

Mugs: Banana Bread

BANANA BREAD. You really can’t go wrong with this.

 Non-stick cooking spray
 3 tbs flour
 1 tbs & 1 tsp sugar
 2 tbs brown sugar
 1/8 tsp salt
 1/8 tsp baking powder
 1/8 tsp baking soda
 1 egg
 1/4 tsp vanilla extract
 1 tbs vegetable oil
 1 tbs milk
 1 ripe banana, mashed

1. Spray your mug with cooking spray, and in the mug, whisk flour, sugar, salt, baking powder, and soda. Add egg and combine with dry ingredients. Mix in vanilla, oil, milk and mashed banana.

2. Microwave for roughly three minutes, and you’re done!

Mugs: Blueberry Muffins

Here’s to healthy, one-minute muffins. Time: 1 minute (unless you decide to make more, which I highly approve of.)
  • 1 oz. frozen blueberries
  • 1/4 cup ground flaxseed
  • 1/2 tsp baking powder
  • 2 Tbsp sugar-free pancake syrup
  • 1/2 tsp orange zest
  • 1 egg white
  • 1/2 tsp nutmeg

Mix dry ingredients together thoroughly, and then add the egg, syrup and zest.
Pour into a relatively large mug that you have sprayed with oil and put in microwave for 90 seconds.
Here’s where you do your own things. For the healthy people, blueberries and other fruits work well. If you’re like me, then it’s syrup and butter. A little calories doesn’t hurt, right? Enjoy!

Mugs: Cinnamon Rolls

Three minutes — certainly not enough time for you to go out and buy food, but just enough for you to make these little cinnamon rolls.

    • 2 Tbsp applesauce
    • 1 Tbsp vegetable oil
    • 1 Tbsp buttermilk
    • 1/4 tsp vanilla extract
    • 1/4 cup + 1 Tbsp all-purpose flour
    • 2 1/2 Tbsp packed light-brown sugar
    • 3/4 tsp ground cinnamon
    • 1 dash ground nutmeg (optional, but not really)
    • 1/4 tsp baking powder
    • 1/8 tsp salt
    • Cream cheese icing (also optional, but what’s a cinnamon roll without icing?)
      • 1 Tbsp Cream Cheese, softened
      • 2 Tbsp powdered sugar
      • 1 tsp milk
        • Directions: Just whisk everything together until smooth.

Combine all ingredients (minus cream cheese icing) in a mug, and then whisk together with a fork until smooth.

Microwave mixture  for 1 minute, and make sure it’s edible (poke it with a fork to make sure). If it isn’t fully cooked, microwave for an additional 15 seconds. Prepare cream cheese icing according to directions above.

Serve warm topped with icing. Enjoy!

Mugs: Nutella Cakes

For all of you guys who spent Valentine’s by yourself. Just kidding. But you still should try this. Total Time: 5 min

  • 4 tablespoons of self-rising flour
  • 4 tablespoons of sugar
  • 1 large egg
  • 3 tablespoons of cocoa powder
  • 3 tablespoons of Nutella
  • 3 tablespoons of milk
  • 3 tablespoons of  vegetable oil
  • Optional: whipped cream topping
    • ½ cup of heavy cream
    • 1 tablespoon of sugar
Combine all ingredients in a large coffee mug, and whisk with a fork until fairly smooth.
Microwave for 1½– 3 minutes on high.
Add heavy cream to a separate bowl, and using an electric beater, whip until almost stiff, and finish it off with sugar.
And if you want whipped cream or chocolate, this is where you do whatever makes you happy. 🙂
