Mugs: Blueberry Muffins

Here’s to healthy, one-minute muffins. Time: 1 minute (unless you decide to make more, which I highly approve of.)
  • 1 oz. frozen blueberries
  • 1/4 cup ground flaxseed
  • 1/2 tsp baking powder
  • 2 Tbsp sugar-free pancake syrup
  • 1/2 tsp orange zest
  • 1 egg white
  • 1/2 tsp nutmeg

Mix dry ingredients together thoroughly, and then add the egg, syrup and zest.
Pour into a relatively large mug that you have sprayed with oil and put in microwave for 90 seconds.
Here’s where you do your own things. For the healthy people, blueberries and other fruits work well. If you’re like me, then it’s syrup and butter. A little calories doesn’t hurt, right? Enjoy!
